Colorful meals and a new bowl

I bought a new bowl for breakfast the other day! From Battenkill pottery. It's so pretty!
Today's bowl of pumpkin oats is topped with wheat berries and toasted slivered almonds.

Lunch was a nummy throw together curry salad. I had 2 oz of cooked chicken breast, 1/2 an apple, 1 tbsp light mayo and curry powder. All chopped up and mixed together. With a side of my buttermilk wheat bread I made the other day, and 2 clementines.



Dinner was some breaded shrimp that I pan fried in a bit of coconut oil. These were really tasty that way! I do love coconut oil. More fruits and veggies! My daily broccoli and a Bosc pear. I think I like the anjou pears better.

I love pears - I buy mine on my grocery stores dollar rack. Everyone just passes on by, but I can get a dozen for $1.00! I just peel them and they are gorgeous, sweet and flavorful.

Hello Lori! First of all, let me just say that your photos look fabulous. I just ate dinner but they still made me want to eat. ;-)

- Tasty? I second that! I love coconut oil, too!

Coconut oil is THE cooking oil, particularly for frying. Coconut oil is 92% saturated, which makes it very stable and highly resistant to oxidation and free radical formation. Just my two cents. :-)
