Quick vegetarian chili


Ingredients:
1/2 cup onion
2 tsp coconut oil (or other oil
1 tsp cumin
2 tsp chili powder
1/2 cup chopped bell pepper
bit of minced garlic
1 cup of cooked white beans (or any bean, really)
1/2 cup TVP, hydrated in a cup of boiling water
1 can of diced or chopped tomatoes with juice
S&P to taste

In a medium saucepan, heat the oil. Add the onions, spices, garlic, and bell pepper and saute for a few minutes. Add the rest of the ingredients and simmer for 15-20 minutes. Add Salt and Pepper to taste.

Yum!

I like this topped with a bit of cheddar cheese and a dollop of sour cream.
