Breakfast was my protein oat pancakes and blueberry sauce. Hot and steaming, I could barely wait to tuck into these!
Lunch was a quick open face tuna sandwich on my buttermilk wheat bread with clementines. I like to eat tuna on my strength training days to boost my daily protein intake.
Latte for a snack, and a handful of chocolate chips :D
I wanted to incorporate lentils into dinner, so I decided on a throw together stir fry. 1 serving of lentils, half cup of cooked brown rice, stir fried in a tsp of coconut oil with some cumin, salt & pepper and mustard seeds. Really quick and easy, which I like. Again - steaming hot, you can actually see steam in this picture! Roasted the broccoli tonight and had 1/2 an anjou pear. I am really on a pear kick as of late.
I fell in love with last night's greek yogurt, honey and Grapenuts combo - so I had it again tonight! Now I'm all out of yogurt!
