Larabar giveaway!
Breakfast, it's what's for dinner!
Chicken soup on the side. It's decent. I get it more because it is a lower calorie soup than any of the others.
With a multigrain baguette piece on the side.
Dinner was a throw together. The cupboard and fridge are a bit bare now. Diced up some bell pepper and carrot, sauteed them in the pan. Added 4 beaten eggs and cooked a bit. Then under the broiler to finish, topped with some reduced fat cheddar.
On the side were some grits leftover from Mardi Gras, and (you know it!)... broccoli!
It was nummy, and looks like a ton of food.
Hooray for pancakes!
Been out of eggs for most of the week, so I haven’t had these babies since Monday!
Did a 200 yard swim, then a 35 minute interval run, so I came back starving.

Cubist dinner
Rainy and dreary here today, but warm – 48 degrees! Spring may get here after all.
Great weather for a yummy latte and a nanner snack.
Dinner was kind of fun. I wanted a sweet potato, so I chopped one into small cubes so it would cook faster. Sauteed it in a bit of coconut oil, salt and pepper. While that was cooking, I chopped up my cooked chicken into little cubes as well. Then tossed in some broccoli florets. Made a colorful yummy meal!
Where to put the cheese?
I was craving feta cheese for lunch. If we had any eggs, I would have made an omelet. I decided on a boca burger, and I usually will put the feta on that, but then I thought it might go well with my pear. So I put the cheese in a bowl until I decided what to do with it.
I tried some feta with the pear, then put most of it on the burger. Plus I just nibbled it right out of the bowl!
Post Y brekkie
With my new work schedule of Sun-Thurs, today is my Saturday! Got up early (as per usual) and went to the Y to workout.
We are out of eggs, so I had oats for breakfast!
Today’s bowl:
40 grams oats
15 grams brown rice protein powder
pumpkin pie spice
1 tsp brown sugar
Topped with toasted coconut, a spoon of chai marmalade and spelt berries.

Post workout lunch
Went to the Y after breakfast and did a good running/swimming/weight lifting routine.
Came home hungry so had a good protein lunch.
Tuna salad on a whole wheat roll, plus 1/2 of a pink lady apple. I also ate a tsp of peanut butter off the spoon.
Blood donation today, so an extra snack comes my way!

A day’s worth of food.
Been really busy, so here is all of today’s food in 1 shot!
Since I had such a large amount of food yesterday, I wasn’t super hungry at breakfast (very unusual). The blintzes with blueberries for 250 calorie breakfast. and my cafe au lait!
Lunch was a chicken salad curry mix. Chopped apple, chopped chicken breast, light mayo and curry powder. Quick, easy and yummy! Served with a nana sprinkled with coconut and some Pepperidge farm wheat crackers.
Snack from Dunkin Donuts! John went to the dentist, and called to ask what I wanted. I chose a nonfat latte flavored with raspberry. Tasty:
Dinner was something new. Morningstar now has a BBQ riblet analog.
It was actually pretty good. I kept thinking about Homer Simpson and the Ribwich, though LOL! There were obviously no bones in this, although it was formed to look like that, so I was a little weirded out about that. Then I just thought of it as meatloaf and realized that was the texture of the food. 18 grams of protein and 5 grams of fiber, so a decent change-up for a main dish.

Mardi Gras dinner!
This is our 3rd year hosting a mardi gras dinner. This year we had crawfish pies, shrimp and grits, collard greens, pralines, and callas cakes.
The crawfish pies – made with trinity, then a super thick roux, stuffed into puff pastry. Yum!
Shrimp and grits, made with large shrimp, a roux, onions and bacon. Grits were made with chicken broth.
Collard greens, made from a recipe from Diet,Desserts, and dogs. Very good, I might add!
Close up of crawfish pie:
Dessert was callas cakes, which I would have to get the recipe from my sister. They are a fried rice cake, made with cooked rice, flour, sugar, eggs, nutmeg and vanilla. Topped with maple syrup and confectioners sugar. Kind of like a beignet. Homemade pralines, regular and peanut butter!
And topped off with a half glass of Killians Irish Red.
I am totally stuffed!

Busy day
I have been ultraproductive today! Up really early, shoveled, did cardio, strength training. Now I am taking a break from work.
Breakfast was warm and filling protein pancakes.
Lunch was a tuna roll. On the side, sliced banana with a touch of toasted unsweetened coconut. That was fun!
And in the mail today came my free True Delights bar from Quaker! I split it with DH. Look at all those chocolate chunks! It was pretty good, although I think I would have liked it a bit softer.

Lovely lentils
John cooked some extra brown rice with his lunch today, so I decided to do a little lentil stirfry for dinner. A bit of coconut oil, cooked green lentils, broccoli and 1/4 cup brown rice. Seasoned with some Sate seasoning. Yum!
With half an anjou pear.
Bagel day!
Working backwards here:
Went grocery shopping after breakfast, so all stocked up on produce, yogurt and yummy stuff.
Lunch was Fage mixed with honey, strawberries and Grapenuts! I love the crunchy, sweet, creamy mix.
Breakfast at Panera Bread. I decided on a different bagel today. Chocolate chip! It was really good.
And hazelnut coffee.
No worries, I already did 30 minutes of aerobics today!

Sauced up.
Dinner was stir fried chicken breast in Country Bob’s sauce, sauteed broccoli and the last of the clementines. Grocery shopping tomorrow!
John and I were going to a concert tonight, but it was standing room only, and we didn’t feel like standing for 2 hours. So we just went to a cafe where I had a wonderful nonfat cappuccino. I drizzled it with a bit of honey and dusted it with cinnamon.
Bagels for breakfast tomorrow!
Lunch and latte
Took my mom out shopping today at my favorite consignment store. Then we went next door to Samantha’s Cafe, where we met my hubby and had a great lunch!
I had a turkey with cranberry chutney on whole wheat. It was very tasty, and fresh turkey – not deli turkey.
At home, you know what I had! Drizzed with agave nectar on top.00
Banana oats
This bowl of oats was sooooo good this morning! I was salivating while taking the picture.
The mix:
1/2 cup oats, 1 small banana (mashed), 1/4 cup pumpkin, cinnamon – all cooked together.
Topped with 2 tsp natural peanut butter and a dusting of unsweetened coconut. Yum!! About 300 calories for the bowl, which will last me all morning.

Snack attack
It’s Friday!
Working backwards here. Lunch was a tuna salad on the wheat hot dog roll. This is a fun way to eat the tuna, I have to say! Sprinkled with lemon pepper. The last of my strawberries until grocery shopping on Sunday! You can tell it’s getting near the end of the week. Running out of produce.
Breakfast after my workout was protein pancakes. Yum! Did I mention breakfast is my favorite meal of the day?
