Comfort lunch

The sun has come out today and is melting the snow. Yay!  Had a yummy comforting lunch of egg salad on Triscuits.  Plus more clems.  The season will be ending soon on these.eggsalad

Snack today was more strawberries.  This batch of berries has been so wonderful!  Sometimes you get berries and they are mushy or bland.  Not these.  And only $2.50 per pound!

Snowy Oatmeal

This was the view out my kitchen window today:


The perfect setting for this bowl of warm pumpkin oats.

1/2 cup oats
15 grams brown rice protein
1 tsp brown sugar
pumpkin pie spice
Topped with spelt berries and toasted almonds.

Quiet dinner

Well, the snow has started and it's a quiet evening at home. We were going to go out for coffee, but too snowy!

Dinner was another of those chicken sausage links. They are so darn good! And broccoli is back, yay! Panfried with a bit of coconut oil. Plus 2 clems.


Since we don't get coffee out, I had some tea and a hand full of dark chocolate chips instead.
Shoveling tomorrow!

Berries and Buns

Lunch was kind of fun - I decided to put tuna salad on a wheat bun that I toasted in the oven. Kind of like a lobster roll, only with tuna. I wish it were lobster!


Snack was a latte and some yummy strawberries! I go through about 2 pounds a week of berries. Mmmmmmm..... On my little pixie plate (so called because the kitty looks like my cat Pixie - although you probably can't see the plate under the berries).

Pancakes 2 ways

We both had pancakes for breakfast. Mine were the standard ones I do every other day. These babies pack 31 grams of protein and 9 grams of fiber including the blueberries! Awesome!


John's pancakes were made from Arrowhead Mills Buckwheat pancake mix, to which he added cocoa powder, instant coffee, protein powder and sprinkled with toasted coconut. He said they needed more cocoa powder LOL!

Chickenfest

Had chicken for both lunch and dinner today!
Wonderful natural chicken apple sausage on a wheat roll for lunch. It was so good! With more of that yummy broccolini and some clems.


Dinner was pan-seared chicken breast with a side of acorn squash (no broccoli!!) and strawberries. I dearly love that I can get strawberries year round in upstate NY! In Illinois, they were seasonal or at least way too expensive during the winter.

Cottage cheese oats


Okay, new oatmeal recipe!
Normally I do protein powder in my oats, but I accidentally bought a large container of cottage cheese at the grocery store last week, so I am looking for ways to use it up without eating it plain (I have a texture issue with it). I have seen other people add it to oats, so I figured "Why not?".

The mix:
40 grams of oats (1/2 cup)
1 cup water
pumpkin pie spice
pinch salt
1/4 cup cottage cheese
1/2 cup pumpkin
1 tbsp spelt berries
dollop of chai marmalade

I cooked the oats in the water, then when they were just about done, I added the cottage cheese. I didn't expect it to melt in, but it did and made the oats smooth and creamy. Then stirred in the pumpkin and topped with spelt berries and marmalade.

And, served with cafe au lait, as always.
