Sunny colors for lunch!

Even though today is cloudy, my lunch was very sunny, everything from the yellow side of the color spectrum! Egg salad on buttermilk wheat bread, plus some reduced fat cheese on the side. One egg doesn't give me enough protein, so I wanted to supplement. Plus I loves me some cheese! And the ever present clementines. I'll be sad when the season is over!



This morning's oats were the typical pumpkin oats, but I have a new fun topping: Chai Marmalade! From Bittersweet Herb Farm. It is really yummy.


Usually I have a tsp of brown sugar in my oats, but the marmalade was a nice change. It sort of melted on top and then I stirred it in. Topped with wheat berries and some toasted pecans.

Daily grains

Breakfast was my protein oat pancakes and blueberry sauce. Hot and steaming, I could barely wait to tuck into these!


Lunch was a quick open face tuna sandwich on my buttermilk wheat bread with clementines. I like to eat tuna on my strength training days to boost my daily protein intake.


Latte for a snack, and a handful of chocolate chips :D


I wanted to incorporate lentils into dinner, so I decided on a throw together stir fry. 1 serving of lentils, half cup of cooked brown rice, stir fried in a tsp of coconut oil with some cumin, salt & pepper and mustard seeds. Really quick and easy, which I like. Again - steaming hot, you can actually see steam in this picture! Roasted the broccoli tonight and had 1/2 an anjou pear. I am really on a pear kick as of late.


I fell in love with last night's greek yogurt, honey and Grapenuts combo - so I had it again tonight! Now I'm all out of yogurt!

Trying some new things!

I wanted to jazz up my tuna sandwich, so I decided to make a tuna melt. I did my usual tuna with mayo and lemon pepper, then topped with reduced fat cheddar and put it in the toaster oven.

It was interesting. Not sure I really like the cheese/tuna combo.

Afternoon snack was my usual latte and banana (sorry, no pic today!)

Dinner was a little different than planned. Computer stuff kept me busy, so I decided on a quick meal - Chick'n boca burger, steamed broccoli and strawberries! I love strawberries!


Post workout snack was wonderful! 2% Fage yogurt with honey and some Grapenuts. This really hit the spot, smooth, creamy, sweet and crunchy!

Sunny breakfast

The sun is shining so bright this morning! Too bad it was minus 9 when I got up!! Eeek! Supposed to be in the 40s on Sunday, though. Come on Spring!

Today's oats were the usual pumpkin oats, but topped with peanut butter today:


Not sure I liked the peanut butter on the pumpkin oats all that much. I love it on the banana oats, but I needed some fat in this bowl, and didn't feel like pulling nuts out of the freezer - so I went with the pb. I am loving the wheat berries, though. Nummy! I'm so glad I found them!

Colorful meals and a new bowl

I bought a new bowl for breakfast the other day! From Battenkill pottery. It's so pretty!
Today's bowl of pumpkin oats is topped with wheat berries and toasted slivered almonds.

Lunch was a nummy throw together curry salad. I had 2 oz of cooked chicken breast, 1/2 an apple, 1 tbsp light mayo and curry powder. All chopped up and mixed together. With a side of my buttermilk wheat bread I made the other day, and 2 clementines.



Dinner was some breaded shrimp that I pan fried in a bit of coconut oil. These were really tasty that way! I do love coconut oil. More fruits and veggies! My daily broccoli and a Bosc pear. I think I like the anjou pears better.

Quick vegetarian chili


Ingredients:
1/2 cup onion
2 tsp coconut oil (or other oil
1 tsp cumin
2 tsp chili powder
1/2 cup chopped bell pepper
bit of minced garlic
1 cup of cooked white beans (or any bean, really)
1/2 cup TVP, hydrated in a cup of boiling water
1 can of diced or chopped tomatoes with juice
S&P to taste

In a medium saucepan, heat the oil. Add the onions, spices, garlic, and bell pepper and saute for a few minutes. Add the rest of the ingredients and simmer for 15-20 minutes. Add Salt and Pepper to taste.

Yum!

I like this topped with a bit of cheddar cheese and a dollop of sour cream.

Banana Oatmeal

I wanted a change up from my usual pumpkin oats. Hannaford had a sale on ripe bananas the other day - I got 2 pounds of bananas for 40 cents! So I just threw those into the freezer.

Decided to make oatmeal with one today:


40 grams of rolled oats (1/2 cup)
1/2 of a ripe banana
1 tsp cinnamon
1 cup water
pinch of salt.
Boil the water and all all ingredients. Turn heat low medium low and cook, stirring to incorporate the banana. The ripe banana will kind of melt into the oatmeal.

Add-ins today:

13 grams protein powder
2 tbsp wheatberries
1 tsp natural peanut butter
5 dark chocolate chips, just for fun!

Total calories approx 350
